Fairmont Grand Del Mar is San Diego County's most prestigious resort — Mediterranean architecture, a canyon-view ceremony lawn, and ballrooms built for grand receptions. The Grand Del Mar's style is Mediterranean and opulent — warm stone, arches, fountains, and formal ballrooms. Florals here can be classic and lush — garden roses, peonies, hydrangea, and olive greenery in whites, ivories, and blush — or richer, with gold, champagne, and deeper tones for an evening ballroom. We design to the resort's warmth rather than against it.
The resort's ceremony lawn looks over Los Peñasquitos Canyon with the hotel as the backdrop. We design arches, columns, and aisle florals weighted for outdoor conditions and framed to the view, and build indoor alternatives with the resort when the weather calls for it.
The ballrooms have classical detailing and generous proportions, which suit tall centerpieces, candelabras, and a dramatic head table alongside lower garden-style designs. We plan the program by table count and scale it to the room.
We build suspended installations, floral walls, and entrance pieces for the ballrooms, and plan ceremony florals that can move into the reception, on structures we own.
Because our studio is in San Diego, the Grand Del Mar is local for us — no travel fees, easy site visits, and crews who know the property. We coordinate timing, access, and the ceremony-to-ballroom move with the resort's events team and confirm any requirements at the walkthrough. We design here for Indian, Jewish, and luxury weddings.
